Zach Schroeder, Program Director & Executive Chef, joins us from the Les Cheneaux Culinary School with a Cooking Demonstration on Lacto-Fermentation. What is lacto-fermentation? It is the process by which bacteria break down the sugars in foods and create lactic acid. Lacto-fermented foods include yogurt, sauerkraut, kimchi, and pickles.
